Amazing Lo-Mein
INGREDIENTS:
Vegetable Stir Fry
1/2 cup sliced carrots
1 cup Snow Peas
1 cup chopped mushrooms
1/2 cup sweet peppers
1/4 chopped onion
1 cup raw Spinach
1 Garlic Clove chopped or slivered
1 Package of Rice Noodles (Optional Egg Noodles)
2 tbsp Olive Oil
Sauce Ingredients:
4 tbsp Low Sodium Soy Sauce
2 tsp of Sugar or Honey
2 tsp Sesame Oil
1 tsp ground Ginger
Optional Proteins: Shrimp, Chicken or Tofu
DIRECTIONS:
Heat a large frying pan with Olive Oil and fill a pot with water for your pasta (bring to a boil).
First up is to chop and saute your vegetables. Start with the hard vegetables first - carrots and peppers. After they have slightly softened add in the onion, mushrooms and snow peas. Add in the spinach last.
While you are cooking the vegetables, cook your pasta following the directions on the package.
While both are cooking its time to make your sauce! Super simple, Start with the soy sauce and sugar/honey. Whisk those together. Whisk in the sesame oil and ground ginger.
Once your noodles are cooked, drain and add to your veggie mixture.
Pour sauce over the noodle and vegetable mixture and turn with a spatula or tongs.
Saute the entire mixture for 3 minutes or until you have reached your desired crispiness.
Optional: I love to add baked shrimp or chicken to this because you can just let it bake in the oven while you prepare this stove top! Because the sesame oil packs a lot of punch, don’t worry about seasoning your protein like crazy! I usually just bake with Salt, Pepper, Garlic and sometimes Old Bay Seasonings depending on the protein.
